This recipe is from The New Whole Grains Cookbook by Robin Asbell. It is a wonderful soup for a cold, rainy night like the one we had several weeks ago when I made this soup. I used the lazy girl shortcut of canned pureed butternut squash and it was still excellent.
Back after a looong hiatus. We're still cooking here, though a bit less, especially during the week since I don't get home until after 6. But here's how my version of Princess Sianessa's Spinach "Sausage" Quiche turned out. I used Trader Joe's vegetarian Italian sausage and a homemade canola oil crust. It was decadent and delicious.
